This vegan recipe is a great way to enjoy your favourite Autumnal flavours in a muffin!
INGREDIENTS
- 220g plain flour
- 2 1/2 tsp baking powder
- 1/4 tsp salt
- 100g caster sugar
- 75 ml vegetable oil
- 240ml plant milk (we like oat milk)
- 4 drops Cinnamon Spice Drops
- 2 drops Chai Spice Drops
- 5-7 chopped dates
- 150-200g diced apples
- 75g chopped pecans or walnuts (optional)
Method of Preparation:
- Preheat the oven to 180°C.
- Line 12 muffin tins with paper or silicone liners.
- Mix the flour, baking powder, salt, and sugar together in a large bowl.
- Mix the oil, milk and Spice Drops in another bowl.
- Add the wet ingredients slowly into the dry and mix until combined but don’t overmix.
- Fold in the apples, dates and nuts.
- Fill each muffin lined to about 2/3 full.
- Bake for 30-35 minutes.
- Cool and enjoy with a nice cup of chai tea.
